My husband L-O-V-E-S lemon poppy seed anything. Out eldest ginger prince just started playing hockey. For those of you who have crossed this bridge and have resigned yourselves to being hockey parents you know how difficult it can be to stay motivated for 7 am hockey practices. My husband offered to take the first early morning (little does he know he has just taken over ALL the early mornings!). As a treat for being such a great guy, I baked him a Lemon Poppy Seed Loaf. A friend lent me one of her cookbooks, Grandma's Touch by Irene Hrechuk & Verna Zasada (don't they just sound like really great grandma's?). I adapted their recipe for Lemon Loaf to my own Lemon Poppy Seed Loaf. It turned out great and the best part is my husband loved it!
lemon poppy seed loaf.
ingredients
1/2 cup butter or margarine
1 cup sugar
2 large eggs
1 1/2 cup flour
1 tsp baking powder
1/2 cup milk
1/3 cup poppy seeds
2 Tbsp sugar
2Tbsp lemon juice
Preheat oven to 350 degrees F.
Cream the butter and sugar, then add the eggs. Beat until light and fluffy.
In a separate bowl, blend together the flour, baking powder and salt.
Add dry ingredients to creamed mixture alternately with milk. Mix in poppy seeds. Turn batter into greased loaf pan.
Bake for 55-60 minutes or until a toothpick comes out clean. Cool on a rack for 5 minutes.
Combine the sugar and lemon juice. Pierce the loaf all over with a skewer and pour the lemon mixture over the loaf.
When cool, remove loaf from pan and enjoy!
