Chocolate Chip Cookie Dough Cupcakes

Not the easiest to roll off the tongue, but these little bad boys are so amazingly good on the tongue!  I found this recipe while reading over my Pinterest review email at the end of the week from KevinandAmanda, and decided to give it a go.  There are A LOT of people who stuff their baking.  Who knew you could stuff cookies, cakes, and cupcakes with various fillings?  Not me.  This was my first time at it, and much to my surprise (and my families), these turned out fantastic!

I started with a basic cookie dough recipe, but instead of adding eggs, I substituted milk.  One egg = 2 Tablespoons of milk.  Then I rolled 24 balls and laid them out on a cookie sheet then popped them into the deep freeze.  I left them overnight so that they were good and frozen solid.


The next day, I made the vanilla cake mix for the cupcakes.  Don't tell anyone, but I actually used Duncan Hines for this portion of the recipe...What can I say?  Duncan makes a mean French Vanilla.  I scooped a quarter cup of batter into 24 cupcake liners, then plopped the frozen ball of goodness into the center.


Next step was to put them into a 350 degree oven for about 17 minutes.  I honestly can't believe they came out perfect!


I then frosted them with another amazing recipe for a butter-cream icing, that is truly to die for, sprinkled some cookie bits and chocolate chips then the family devoured them.  These babies are decadent!



Look at that amazing bit of cookie dough in the center!  OMG!  Yummy yum yum...

Cookie Dough Recipe
1 cup of butter
3/4 cup sugar
3/4 cup brown sugar
4 Tbsp milk
1 Tbsp vanilla
2 1/2 cups flour
1/4 tsp salt
1 cup chocolate chips, coarsely chopped or mini chocolate chips

combine the butter and sugars in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 mins. Beat in milk and vanilla until incorporated and smooth. Beat in the flour and salt until just combined. Stir in the chocolate chips. Shape the dough into balls. Freeze on a lined baking sheet overnight.

Butter-Cream Icing Recipe
1 1/2 cups of butter
3/4 cup light brown sugar, packed
3 1/2 cups powdered sugar
1/2 tsp. salt
2 tbsp. milk
1 tsp. vanilla extract


combine the butter and brown sugar in a mixing bowl and cream on medium-high speed until light and fluffy.  Beat in the powdered sugar until smooth.  Beat in the salt, milk, and vanilla extract until smooth and combined.

  5. Just found you from your Kit Kat Cookies on Sweet Treats Thursday! These are my favorite type of cupcakes! I have made them before but used chocolate cake mix with peanut butter cup cookies!! If you like the chocolate/peanut butter combo you'll love these!!
    PS - if you ever need to make them in a hurry, you can use the break and bake cookie dough too! It turns out just as good as homemade cookie dough!

  7. I just found your blog today - so fun!! These cupcakes look fabulous! I have been wanting to make some since I first saw them on Kevin and Amanda, but I still haven't...one of these days!! BTW I like using Duncan Hines mixes as a base. :)
