Rainbow Cake

I am still having a hard time grasping the fact that my eldest ginger prince just turned 6...six! Whoa. I mean look at this little guy...six years ago...


Being that I live in a house full of testosterone, when he asked me to make him a rainbow cake I jumped all over it! I have made rainbow cupcakes before so I kind of knew what I was doing, but just to make sure I consulted with Pinterest.

Then I went out and bought my ingredients, which consisted of 2 boxes of white cake mix, 2 jars of white frosting, and a tub of vanilla yogurt. I had the food coloring and sprinkles already. Lucky for me I have 3 8 inch cake pans, if I had only two it would have taken longer, but if I only had one...I shutter to think! I mixed the cake mix and a 1/4 cup of yogurt per box (makes the cake tastier and the food coloring richer) into 6 bowls and made then as even as possible. Next, I added my food coloring. Red, Orange, Yellow, Green, Blue and Purple. Then my oven went to work on each color for about 18 minutes. I let the cakes cool completely then stacked them in order with a bit of frosting in between.


Finally, I frosted the whole thing with white frosting and sprinkled some rainbow colored sprinkles on top.


It turned out awesome! All the birthday guests had a great time, in fact one of my nieces told me that this was the best birthday party ever, and I'm pretty sure it was because of the cake!
