I have this great friend that I met through my eldest ginger prince. It is one of his friends mom. She is a fantastic cook (good thing she invites me over!). Lucky for me she shared one of her recipes with me for homemade scones. I was in love with the first buttery bite. Then to add strawberry jam on top...whoa.
I thought I would share this treat with you all as I just whipped it up this morning.

Ingredients:
2 cups flour
1/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cup margarine
3/4 cup buttermilk
1 large egg
Directions:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
Sift together the flour, sugar, baking powder, baking soda, and salt in a large bowl. Add margarine and work in with a pastry blender until it is the texture of course meal.
In another bowl, whisk together buttermilk and egg. Pour over the flour mixture and stir until the dough comes together.
Stir in blueberries, currents or any other add in you like, about 1 cup. For myself I added in 1/2 teaspoon of vanilla.
Drop on baking sheet.
Sprinkle tops with sugar.
Bake 15 -20 minutes or until lightly browned.
Enjoy!
