S'more Cupcakes

Summer is here and what says summer better than S'mores? S'more Cupcakes! These little babies are magnificent. A treat to be had outside on the patio, after a hot dog!


Really easy to make too! First, I scooped the graham crumb mixture into the bottom of the liners. I used a shaker of Mrs. Dash to press down the crumbs, then added a sprinkling of chopped chocolate.



Next, pop these bad boys into a preheated 350 degree oven for about 5 minutes.
I then made the cake batter and added it to the crumbs and chocolate to about 3/4 full. Next, I added a few mini-marshmallows on top and baked it all for about 20 minutes, or until a toothpick inserted into the middle came out clean. Finally, add your frosting and some more yummy graham crumbs and a little piece of chocolate and done!

Yield: 24 cupcakes
Ingredients:

For the graham cracker crust:
1½ cups graham cracker crumbs
¼ cup sugar
5 1/2 tbsp. unsalted butter, melted
6 oz. semi-sweet chocolate, finely chopped



For the cake:
2 cups plus 2 tbsp. sugar
1¾ cups all-purpose flour
¾ cup plus 1 tbsp. cocoa powder
1½ tsp. baking powder
1½ tsp. baking soda
1 tsp. salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 tsp. vanilla extract
1 cup boiling water
