French Toast & Bacon Cupcakes

I woke up this morning to a rainy day. Blah. I thought we needed to lift our spirits a little so I took to the kitchen and was inspired by bacon (yeah, bacon). Here is what I came up with...


Delicious, can't get enough, so tasty french toast and bacon cupcakes! I adapted the recipe from a couple of different ones. Give it a try! I know you will not be disappointed.

french toast & bacon cupcakes.
yield 12 cupcakes


Ingredients:
3/4 cup butter or margarine
1 cup sugar
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup milk
1 large egg
4 pieces of bacon, chopped

Directions:
Preheat oven to 375 degrees. Line a muffin tin with 12 liners.
Using your mixer with the paddle attachment, combine butter/margarine and sugar until light and fluffy. Be sure to scrape down the sides a few times.
In a separate bowl, whisk together the flour, baking powder, salt, nutmeg and cinnamon. Set aside.
In another bowl combine the milk and vanilla. Set aside.
Add the egg to the butter mixture and make sure it is fully combined. Next add the bacon.
Gradually add the flour and milk mixtures by alternating into the mixer.
Scoop out into your lined muffin tin and bake for about 15 minutes or until a toothpick inserted into the middle comes out clean.

maple frosting.
yield about 1 2/3 cups (enough for 12 cupcakes)


Ingredients
1 cup butter or margarine
1 3/4 cups icing sugar
2 teaspoons milk
3/4 teaspoon maple extract

Directions
Using your mixer again with the paddle attachment combine the butter/margarine and icing sugar until well combined. Make sure you scrape down the sides a few times.
Add the milk and maple extract and mix until light and fluffy. Store in the fridge until you are ready to use it. You can keep the frosting in an airtight container for about 3 days.
