Mango Salsa

Summer brings some of the most tastiest fruits with it. A new favorite of mine is mango. My good friend and neighbor brought over some mangoes for our family. I admit they did sit for sometime before I knew what to do with them...SALSA! Now mango salsa is my all time new fav appetizers!


The recipe is extremely easy and incredibly simplistic to put all together. Even if you aren't a chef (which I am so not), you could whip up this recipe and knock your friends socks off!

mango salsa.
yield about 4 1/2 cups


Ingredients
6 ripe mangos, chopped
Half red onion, finely chopped
1 whole cucumber, peeled and diced
2 jalapeno peppers, one seeded and chopped, the other chopped with seeds
1/2 cup cilantro leaves, roughly chopped
2 1/2 tablespoons of lime juice
Salt & Pepper, to taste

Directions
Combine the mango, red onion, cucumber, jalapeno, cilantro and lime juice. Add the lime juice, mix well. Season with salt and pepper.

I have tried it with tortilla chips, on a chicken breast burger and with mini tacos...all were amazing!
